Tips for Grilling Veggies

Contrary to popular belief, grilling is not just for meats. One of the reasons we grill is to draw out an ingredient’s natural sugars, to caramelize the sugars with the high heat of the grill, and to form a flavorful exterior while maintaining a juicy interior. While this works for meats, this works perfectly for veggies as well, because they are full of natural sugars. Because of this, you really don’t need to do much to vegetables to get them to taste really good when grilled.

Our biggest tip to grilling veggies is chop them to the right size, so that they don’t fall through the grill grates. Also, the smaller you chop, the more pieces you’ll have to flip while grilling. For vegetables that take a little longer to cook, like zucchini or eggplant, make scores in the flesh, so that all the flavor can seep in and they’ll cook faster, too.
