How to Make Pizza-Stuffed Zucchini

Enjoy pizza without any guilt with our latest low-carb “pizza” recipe. Using zucchini to hold pizza toppings is a tasty way to cut back carbs and #eatmoreveggies.

We absolutely love pizza.

How can anybody say no to a combo of crust + tomato sauce + cheese + meat and / or veggies? Okay, so we’re pretty sure there may be pizza naysayers out there, but for most folks, pizza is a good thing.

Except when you’re trying to cut back on some carbs.


As much as we love our carbs, we’re all about enjoying foods in moderation, which means not stuffing our faces with pizza, as tempting as that may sound.


We like to keep our meals balanced with a variety of foods from the different food groups. So if we started the week with a rice bowl or a pasta dish, and we really want a pizza at the end of the week, well . . . we have just the right solution.

Zucchini makes a sturdy shell for holding all the delicious pizza ingredients that make a pizza amazing – the tangy marinara sauce, ooey gooey cheese, and all your favorite toppings. It’s also a great way to cut out the bread carbs, and instead, increase your veggie intake.

Another things is, you don’t have to worry about making or prepping pizza dough, so a healthy, low-carb, and tasty weeknight dinner can be on the table in 35 minutes. Watch how easy it is to make Pizza-Stuffed Zucchini with our video:

How to Make Pizza-Stuffed Zucchini

This low-carb take on pizza means you can eat more veggies while still enjoying all the flavors of a good pizza.

We like to stuff our zucchini boats with mushrooms, bell peppers, and Italian sausage for a classic combo that is a winner for everyone, but once you know the basic technique to making stuffed zucchini, you can add your own favorite toppings – mini pepperoni, sliced black olives, chopped artichoke hearts, shredded rotisserie chicken, etc. You can even create a buffet-style dinner, which is fun for the whole family and allows for everyone to personalize their own low-carb pizzas.

PIZZA-STUFFED ZUCCHINI:

Inspired by the flavors of pizza (but with far fewer carbs), zucchini makes a sturdy shell for a filling of Italian sausage, bell peppers, mushrooms, and mozzarella. If you like a little spice, use spicy sausage, or top the baked zucchini with red pepper flakes.
