I cook for: my husband and toddler, and baby with gluten / dairy intolerances.
Outside of the kitchen I: build furniture and homestead.
If I could have any superpower it would be: telekinesis! Chopping would be a breeze.
I cook because: I value whole, healthy, organic foods for my family.
Favorite Cook Smarts meal so far: Batterless Chile Rellenos
How did you learn to cook?
Self-taught through a lot of trial and error in high school.
What’s been your biggest cooking challenge?
Frying is always a challenge; I have trouble with heat regulation.
How has your cooking routine changed since starting Cook Smarts’ meal plans?
Having a baby with food intolerances meant a lot of changes for both of us. Finding good paleo meals is a challenge, and coming up with the substitutions is difficult on little sleep. I was so relieved to see how easy it was to change meal styles on Cook Smarts, I signed up immediately!

Tell us about your proudest kitchen moment.
Cooking my first delicious roast chicken from a hen I raised myself on organic feed from a chick. That was an amazing feeling!
