Make Delicious Honey Lime Salmon in Just 25 Minutes!

Weeknight Meals via @CookSmarts: Honey-Lime Salmon #recipe

What do you do when summer is halfway out the door and fall is starting to get comfortable in your kitchen?

For us, there are perks to each season, but sometimes we’re stuck in the “in-between” phase, where we haven’t quite said goodbye to summer yet, but are not quite in the fall mood yet. So what we like to do is make the most out of both seasons with a simple and delicious dish that is healthy and light for the summer, but with ingredients that you can find year-round. Hence, our recipe for Honey-Lime Salmon.

The salmon is simply broiled, and the only work you have to do is whisk together a quick and easy dressing made of honey, lime juice, oil, and green onions.

We recently kicked off our How to Maximize Flavor series, and this recipe is a perfect example of adding flavor to your food, with it’s easy cooking, but wow factor in flavor.

Knowing how to make a simple dressing can go a long way. One bite of this salmon, and you will know how much of a difference it can make.

We love this Honey-Lime Salmon with our Tomato, Avocado, and Quinoa Salad. In fact, these recipes go hand-in-hand, making it for a complete meal with quick prep / cooking time. All you have to do is double up the recipe for the dressing, pour half over the salmon, and then toss the remainder with the salad. You can never go wrong with the concept of “make once, use twice!”

Just making more of any dressing or sauce and using for multiple dishes cuts back on prep time. As much as we love to cook, we don’t want to spend an entire day in the kitchen! So we’re all about taking shortcuts and making cooking easier whenever we can.

Honey Lime Salmon Recipe

Sweet and tart honey and lime infuse great flavors into this salmon dish, making this a perfect healthy and light, but filling meal.

Prep time: 10 min

Cook time: 15 min

Total time: 25 min

Serves: 4

Ingredients

  • Green onions - 1 stalk, sliced (white and green parts separated)
  • Honey - 2 1/4 tsp
  • Lime juice - 1 1/2 tbsp
  • Cooking oil - 2 tbsp
  • Salmon - 1 to 1 1/4 lbs
  • Paprika - 1/2 tsp

Instructions

Prep

  1. Green onions – Slice, keeping white and green parts separated.
  2. Salmon – Rinse and dry.
  3. Make dressing – Mix honey, lime juice, white parts of green onions, a pinch of salt, and oil. Pour over salmon.

Make

  1. Position top rack of the oven so it’s about 6″ below broiler. Turn on broiler to pre-heat.
  2. Line a sheet pan with foil and spray with cooking oil. Place fish on foil, pour dressing over fish, and broil for 12 to 16 minutes, depending on thickness of the fish.
  3. Sprinkle paprika on top of the salmon and enjoy with remainder of the sliced green onions.
