  • I love this recipe. It is now in my regular repertoire. But....how can fried bacon and fried eggs be considered "healthy?" I will continue to make but this isn't a go to recipe when I need a healthy meal. Can we define "health," please?

    • @Mtnmona So glad you love this recipe and that it's in your regular repertoire now. Good point on the "healthy." I guess I consider all things relative, cause we could have just had bacon, eggs, sausage, and grits for breakfast and this is a healthy compromise. Clearly, it's not steelcut oats, but I believe healthy involves balance too. Clearly to make it even healthier, you can skip the bacon and fry the egg with almost no oil using a really good non-stick pan.
