  • I sometimes add a thin slice of apple on top during the simmering phase, it adds a hint of sweetness. Also Italian herbs is a another favorite addition. I have skipped the sear phase and crumbled foil and then placed the fish on top, to steam, this is excellent with salmon, will always be warm and moist.
