We have another great week of easy fall weeknight dinners for you! We’re starting off with an easy Thanksgiving-inspired recipe, just in time for Canadian Thanksgiving 2021. We’re also sharing a Dan Dan Noodles recipe, a Minestrone Soup recipe with a fall twist, and baked breaded chicken breasts with miso-maple butter.

Thanksgiving Burger with Cranberry Sauce and Brussels sprouts

Gluten-Free: Thanksgiving Burger on Gluten-Free Bun

Paleo: Thanksgiving Burger Salad with Roasted Sweet Potatoes and Brussels Sprouts

Vegetarian: Fried Egg and Gruyere Breakfast Sandwich with Fried Sage Leaves 

To start off the week, we’re celebrating Canadian Thanksgiving! This is a Thanksgiving-inspired recipe that anyone can pull off without a lot of prep and spending all day in the kitchen. It’s a Thanksgiving Turkey Burger topped with gruyere cheese and cranberry sauce, served with a side of oven-roasted lemon-thyme Brussels sprouts. The vegetarian version transforms this meal into a Fried Egg and Gruyere Breakfast Sandwich instead, so take your pick for how you want to celebrate the holiday. And for all of our American members, which is most of our members, if you’re looking to take a break for American Thanksgiving this year, consider bookmarking this for then, too! Alternately, burger patties and buns freeze well, so you can make them now and have them again later.

Vegetarian: Dan Dan Noodles with Tofu, Mushrooms, and Broccoli

Next we’re bringing back a tried-and-true favorite — our Dan Dan Noodles. So Dan Dan Mian (mian is “noodles” in Mandarin Chinese) originates from the Sichuan region of China and is perhaps one of the most popular Sichuan dishes that’s been exported out of China. It uses a wheat-based noodle, as opposed to a rice noodle, and served with a spicy and savory sauce that coats those chewy noodles. It’s just comfort in a bowl. If you haven’t tried this dish yet, you will love adding this to your pasta repertoire. The original version uses ground pork and the veg version uses tofu and both hit the spot because of the sauce.

On Wednesday, we’re bringing you a fall minestrone soup recipe with butternut squash and chard. This soup is like the perfect fall jacket. It’ll wrap you up, keep you warm, and is the perfect fall accessory. It gets a lot of earthiness from sage, mushrooms, chard, thyme, and bay leaves. There’s sweetness from the squash, and kidney beans and pasta bulk it up. I think it’ll become a fall soup you turn to again and again throughout the season and the years to usher in the cooler weather. This soup also freezes well, so feel free to cook extra for a busy weeknight later on.

To end the week, we have baked breaded chicken breasts or portobello mushrooms with miso-maple butter, which is served with roasted carrots and brown rice. Whichever version you do, you’re going to be making a compound butter that’s flavored with ginger, miso paste, and maple syrup giving you spice, umami and sweetness all together. I love these types of meals because they follow the easiest meal formula — a protein, a veg, a carb, all tied together with a sauce. Save time by making the rice and miso-maple butter in advance, and this meal will come together quickly.
