Spanish Chicken and Rice Repurposed | 4/08/13 Meal Plan

This will be our last week of new meal plans. Over the next three weeks, we’ll be offering a collection of your favorites. Don’t forget to vote here. Even if you havent made some of the dishes on the list, just vote for the ones that sound tastiest to you.

I wanted to make sure our last free meal plan of new meals featured  the most important meal planning practice we all should do more of – repurposing. Cooking once, eating twice is a mantra we all should follow in the kitchen. Tuesday’s hearty Spanish Chicken and Rice makes the perfect start for a Chicken and Rice Stew. And just in case there’s not enough chicken left from Tuesday’s dish, we supplement our stew with a can or two of beans. It’s like magic, eh? Let’s make more magic happen in our kitchens together!
