Wintry Beef and Barley Soup & Thai Basil Stir-fry | Weekly Eats Meal Plan 2/11/13

I had a case of recipe block earlier this week, so I asked our Facebook fans (please become one if you’re not!) what meals they wanted to see on Weekly Eats. The most common answers were warm, winter recipes and crock-pot / slow-cooker meals. We love to please, so Monday’s Vegetable, Beef, and Barley Soup is the perfect hearty, winter soup and can be made in a slow-cooker! We give you the directions for overnight / day-of slow-cooking or the traditional stovetop method just in case you don’t have a slow cooker. They do take up a bit of room, but can be a budget and useful addition to your kitchen. We own this one and love its convenience (and price).
