This week’s menu is filled with rich fall flavors, and there’s something for everyone! Make our Pork Chili Verde Tacos and Thai Red Curry in advance, enjoy a Cioppino recipe, and try a new technique for our Hasselback Chicken with Spinach and Cheese.

MONDAY

Cioppino with Mussels and Halibut with Green Salad and Baguette

Paleo: Cioppino with Green Salad

Vegetarian: Vegetable and White Bean Stew with Baguette

We’re starting off on Monday with our cioppino recipe that features mussels and halibut and is served alongside a green salad and baguette. Cioppino is a seafood stew that feels very upscale (like something you might order at a nice restaurant), but it’s actually really simple to make. The base of the stew is tomatoes with white wine and stock, and it has some great aromatics like bay leaves, oregano, and garlic for flavor. Now, if you’ve never cooked mussels before, don’t be intimidated. It’s really easy and of course we’ll tell you exactly how to do it. Or you can make the vegetarian version, which is a delicious, 40-minute Vegetable and White Bean Stew.

TUESDAY

Slow Cooker Pork Chili Verde Tacos with Coriander Spicy Asparagus

Paleo: Pork Chili Verde Tacos with Paleo Tortillas and Coriander Spicy Asparagus

Vegetarian: Pinto Bean Chili Verde Tacos with Coriander Spicy Asparagus

Next, on Tuesday we have Slow Cooker (or Instant Pot or stovetop) Pork Chili Verde Tacos, or Chili Verde Pinto Bean and Corn Tacos if you are going meatless. Our chili verde tacos are topped with pickled red onions, cheddar cheese, arugula, and sour cream, and served with a side of spicy asparagus that is roasted to perfection. This is a great meal to prep in advance and save yourself time in a busy week, and then you’ll just reheat the pork while you’re roasting the asparagus, assemble your tacos, and dinner is done!

Thai Red Curry Squash and Chicken with Coconut Rice

Vegetarian: Thai Red Curry Squash and Tofu with Coconut Rice

On Wednesday we have a 40-minute Thai Red Curry Squash and Chicken (or Tofu) with Coconut Rice recipe. This curry is full of classic Thai flavors like lemongrass, fresh ginger, lime, curry paste, and coconut milk, and it contains kabocha squash and red bell pepper. This is another great make-ahead meal — in fact, you can prepare both the red curry and the coconut rice recipe in advance and just reheat them. Curry is actually even better if it’s made a couple days before you eat it!

THURSDAY

Hasselback Chicken with Spinach, Bacon, and Cheese + Lemon-Mustard Brussels Sprouts

Vegetarian: Spinach and Cheddar Frittata

Finally, on Thursday we have a really fun meal for you. It’s Hasselback Chicken with Spinach, Bacon, and Cheddar. This is a totally new meal in our meal plans, and I know you’re going to love it. If you’ve ever had hasselback potatoes, which are those potatoes that are really thinly sliced about three-quarters of the way through and stuffed with filling so they fan out, this is the same idea, but with chicken. You’ll slice the chicken part way through and fill it with a spinach and cheese mixture before cooking it. This makes the chicken cook really evenly and also just looks pretty. Then the hasselback chicken is topped with crumbled bacon and served with a side of roasted lemon-mustard Brussels sprouts. Or you can make a quick Spinach and Cheddar Frittata with the same Brussels sprouts if you are cooking vegetarian.
