Fun and Festive Olympics Menu | Meal Plan Menu (7/26/21)

Whether you are or aren’t watching the Olympics the next two weeks, our Olympics Menu is not to be missed! Enjoy everything from Tonkatsu Bento Boxes to Beer Brats and German Potato Salad.

Tonkatsu Bento Box (Japan)

Since this year’s Olympics is taking place in Japan, we knew exactly where to start our 2-week Olympics menu. Tonkatsu is a Japanese breaded and deep-fried pork cutlet that is full of mouth-watering flavor and texture. Served on a bed of rice, with sides of cucumber salad and edamame, and with a drizzle of our quick and easy tonkatsu-inspired sauce, this is a meal great to enjoy at the dinner table or on the go in true bento fashion!

Meal Planning Smarts:

  • You can save time on the day you plan to make this by preparing the rice, sauce, and dressing up to 5 days ahead.
  • Our tonkatsu sauce is easy to prepare but if you don’t have the ingredients on hand (or just prefer to buy it), look for this savory-sweet sauce bottled in the international aisle.
  • Any rice will work for this tonkatsu bento, but if you keep sushi rice in the pantry or want to try it, it’s a fun option for this meal!
  • We wanted to fill the bento box with plenty of delicious options, but don’t hesitate to skip a component if you prefer to simplify the meal and save more time.

Diet Variation:

  • Gluten-Free: Substitute almond flour and gluten-free bread crumbs for the tonkatsu and tamari in the sauces.
  • Paleo: Our Coconut Tonkatsu Bento uses almond flour and coconut for texture and flavor, swaps edamame for radishes, and changes out a few sauce ingredients.
  • Vegetarian: Make our Tofu Tonkatsu Bento instead and swap out the oyster sauce for hoisin when mixing up the sauce.


Pizza Margherita with Italian Tossed Salad (Italy)

The red sauce, mozzarella, and basil of pizza margherita may sound simple, but there is a reason it has continued to be a classic for over 200 years. Serve it up with our quick Italian-inspired house salad and feel transported to the Italian coast with Day 2 of our Olympics Menu.

Meal Planning Smarts:

  • This recipe includes instructions for cooking the pizza on the grill or in the oven.
  • Make the pizza margherita sauce up to 5 days early to make everything come together faster the day of.
  • Pizza dough freezes well, so you can freeze any extras for a delicious pizza dinner in the future.

Diet Variation:

  • Gluten-Free: You only need gluten-free pizza dough and flour to still enjoy this recipe.
  • Paleo: Make our Basil Chicken with Spicy Marinara that is served with a paleo-friendly Italian tossed salad.
  • Vegetarian: Pizza margherita is already a vegetarian dish, so no changes needed!

BBQ Chicken Thighs with Macaroni Salad (USA)

Tonight we’re staying close to home for the next recipe in our Olympics menu with a classic summer meal from the United States. We let BBQ sauce become a thick, sticky glaze to be brushed onto chicken thighs for a delicious, finger-licking finish. With sides of classic macaroni salad and healthy broccoli and watermelon, this meal feels like quintessential summer.

Meal Planning Smarts:

  • This recipe includes instructions for the grill or the oven.
  • Save time by preparing this meal’s macaroni salad and the potato salad for Thursday’s Beer Brats ahead of time and then pop them out of the fridge and serve chilled.
  • Chicken thighs freeze well, so one of our favorite smart bulk shopping tips is to buy extra to pop into the freezer!

Diet Variation:

  • Gluten-Free: Use gluten-free BBQ sauce and macaroni (or any other small GF pasta).
  • Paleo: Make our Spice-Rubbed Chicken Thighs with tangy broccoli salad and watermelon.
  • Vegetarian: Enjoy our BBQ Baked Beans with all the same delicious sides.


Beer Brats with German Potato Salad (Germany)

To bring Week 1 of our special Olympics menu to a close, we take a little trip to Germany to enjoy bratwurst, peppers, and onions simmered in beer. Serve your beer brats on hoagie buns or alone, but don’t forget to add plenty of your favorite mustard – we love a grainy or spicy variety here! Enjoy the meal with a side of German-style potato salad (which means no mayonnaise).

Meal Planning Smarts:

  • This recipe includes instructions for the grill or the oven.
  • Save time Thursday night by slicing the onions and peppers and boiling the potatoes up to 4 days ahead of time.
  • If you make the German potato salad ahead of time, all you have to do is take out of the fridge and serve chilled.

Diet Variation:

  • Gluten-Free: Make these gluten-free beer brats by choosing your favorite GF beer (or use stock instead).
  • Paleo: Enjoy Simmered Brats with German-style Cauliflower Salad.
  • Vegetarian: No need to miss out on the festive fun! Simply swap out the meat sausages for vegan / vegetarian sausages.
