MONDAY

Shrimp Hoagies with Curtido and Coriander Green Beans

Just one bite of our sweet and spicy shrimp hoagies with Cajun seasoning, chili garlic sauce mayo, and curtido pickled cabbage, and you’ll be smitten with the layers of flavors, textures, and colors. Serve with coriander green beans for a quick Monday night meal that packs in fresh flavor.

Meal Planning Smarts:

  • Make a double batch of curtido pickled cabbage to use for this dinner as well as Wednesday’s Turkey Chilaquiles. Save time in the kitchen by prepping the curtido up to 3 days in advance.

Diet Variation:

  • Use your favorite GF sandwich roll or hoagie for an easy gluten-free meal.
  • Serve the shrimp over the curtido with the chili mayo on top for a simple paleo alternative.
  • Try vegan sausage in place of the shrimp for a delicious vegetarian substitution.

TUESDAY

Sheet Pan Honey Harrisa Chicken with Mediterranean Chickpea Salad

Sheet pan roasted and marinated chicken thighs are a great hands-free dinner option on a busy weeknight. Tonight’s recipe features a honey harissa chicken marinade that is sweet and spicy. Serve with a tangy Mediterranean chickpea salad with bell peppers, cucumbers, red onions, and a homemade dressing. 

Meal Planning Smarts:

  • Green onions are used in the chickpea salad dressing and again for the next day’s Turkey Chilaquiles recipe to make sure none goes to waste.

Diet Variation:

You’ll love the balance of flavors and textures with lightly fried corn tortillas, spicy ground turkey, bell peppers, and onions topped with cool sour creamy and tangy curtido pickled cabbage. Colorful, fresh, and fast — it’s everything you want in a weeknight meal.

  • Turkey chilaquiles make excellent leftovers. Plan ahead for more servings by choosing 6 or 8 servings on our meal plan. We’ll do the math and calculate the ingredients for your shopping list and for cooking!

  • Green beans are used in 2 different meals this week (with Monday’s Shrimp Hoagies), with different preparations. Feel free to substitute with asparagus for one of the meals, if you want something different!
  • This nicoise pasta salad is delicious served warm or at room temperature, making it an excellent meal to make ahead and serve when you’re ready to enjoy.
