MONDAY
Cashew Chicken with Broccoli and Rice
Our quick cashew chicken recipe is a scrumptious recipe with crunchy cashews, tender chicken, vibrant broccoli, and our utterly fabulous stir-fry sauce. This version is the perfect fake-out takeout and is great for the weeknight since it only takes 35 minutes to make!
Meal Planning Smarts:
- Our original, gluten-free, and vegetarian meal plans help save time in the kitchen by making a double batch of rice to serve with this quick Cashew Chicken and Tuesday’s Slow Cooker Mojo Pork Bowl.
Diet Variation:

TUESDAY
Slow Cooker Mojo Pork Bowl with Pico de Gallo
If you’ve never had mojo sauce before, you’re in for a treat with tonight’s dinner! Our version takes inspiration from Cuban mojo with great spices and punchy orange juice that tenders up the pork shoulder roast over several hours. Just toss your ingredients in a slow cooker in the morning and then quickly assemble delicious bowls in the evening with baby spinach, leftover rice from the night before, tortilla chips, and fresh pico de gallo.
Meal Planning Smarts:
- If you’re cooking our original, gluten-free, or vegetarian meal plan, save time by making a large batch of slow cooker pork for these mojo bowls and then use the leftovers to make Thursday’s Baked Pork Taquitos come together in a flash.
- Slow cooker pork makes great leftovers, so if you have a larger cut of pork than listed in the recipe, cook it all and freeze any extra.
- To save time, we included store-bought pico de gallo in the grocery list for this meal, but you can always do homemade if you prefer!

Kielbasa, Potato, and Cabbage Soup
Rustic, comforting, and so simple to make, this Polish-inspired soup uses kielbasa (Polish sausage) and tangy apple cider vinegar to bring all the flavors together. Since this soup is ready in 45 minutes or less, it is perfect for warming up any chilly weeknight.
Meal Planning Smarts:
- It’s optional, but if you would like a creamy element, use sour cream or plain / Greek yogurt as a topping. Since it can add a little something extra to Tuesday’s Slow Cooker Mojo Pork Bowls, tonight’s Kielbasa Soup, and Thursday’s Oven Baked Pork Taquitos, you don’t have to worry about not using up a small tub.

Baked Pork Taquitos with Guacamole
If you’ve never used leftover pulled pork to make homemade taquitos, get ready for a fun, fast, and delicious dinner! While taquitos are usually fried, baking them in the oven is healthier, faster, and still gets them nice and crisp. After just 35 minutes, you’ll be dipping crispy taquitos into guacamole and enjoying a green salad with sweet citrus and crunchy pepitas.
Meal Planning Smarts:
- By using leftover slow cooker pork from Tuesday’s Mojo Bowls, you’ll save yourself hours of cooking time.
- You can add any leftover pico de gallo and sour cream from earlier in the week to elevate this meal.
Diet Variation:
- Gluten-Free – just pick up gluten-free, taco-sized tortillas at the store and you’re good to go.
