Meal Plan Menu | Week of 10/12/20

Serve delicious fall inspired recipes with a side of fun! Our menu this week includes Pork with Braised Cabbage, Skillet Shrimp Enchiladas, Waffle Iron Grilled Cheese (what?!), and a Canadian Thanksgiving inspired dinner the whole family will love.

MONDAY

Herb Marinated Chicken with Potato and Cauliflower Mash

Tonight’s meal is inspired by a Canadian Thanksgiving inspired dinner with comforting classics such as zesty, herby marinated chicken thighs, fluffy potatoes and cauliflower mash, and scrumptious sourdough dressing. An attitude of gratitude is always in season, so we invite you to give thanks and enjoy this delightful autumn meal!

Meal Planning Smarts:

  • This meal will take a bit more time to prepare than our standard weeknight meals, so weekend prep may be your best friend this week. (But not to worry – we break down prep step-by-step as one of the perks of our meal plan service!)
  • Bookmark this meal to celebrate American Thanksgiving later in November!

Diet Variation:

  • For a gluten-free Thanksgiving inspired dinner, use your favorite GF bread for the dressing.
  • Our paleo members will skip the potatoes and make cauliflower mash with roasted green beans instead of dressing.
  • Vegetarians will love our recipe for Sauteed Lentils – we recommend spooning over the potato and cauliflower mash like gravy. Yum!

TUESDAY

Skillet Shrimp Enchiladas with Zucchini

This fun spin on Taco Tuesday is a one-pan dish that’s ready in just 30 minutes! By chopping corn tortillas instead of filling and rolling individual enchiladas, you’ll save time and still get to enjoy all the yummy flavors of enchiladas but in less time and less clean up! Use your favorite store-bought green enchilada sauce to complement the flavors of shrimp and zucchini. Serve with a dollop of sour cream and a squeeze of lime to round out these zesty flavors.

Meal Planning Smarts:

  • We use creamy Monterey Jack cheese in this dish, which will be used later in the week for Waffle Iron Grilled Cheese Sandwiches so none goes to waste.
  • This dish reheats well. Make the entire meal ahead of time and simply reheat prior to serving to save time on a weeknight.
  • Skillet Shrimp Enchiladas are freezer friendly, so feel free to double the recipe and freeze half for later.

Diet Variation:

  • Enjoy gluten-free skillet enchiladas by using your favorite GF corn tortillas and by making homemade green enchilada sauce (recipe for the sauce provided if you can’t find store-bought GF enchilada sauce).
  • Our paleo recipe – Mexican Saute over cauliflower rice – includes ingredients for making your own green enchilada sauce in case you can’t find a store-bought variety that meets your nutritional needs.

WEDNESDAY

Pork with Braised Cabbage and Apples

Cozy fall flavors and textures abound in this dish featuring pan-fried pork cutlets with crisp panko breadcrumbs, tangy braised cabbage and apples, and buttered egg noodles. The creamy Dijon sauce might just be your new favorite thing to add to just about everything! 

Meal Planning Smarts:

  • To get just the perfect texture on the pork cutlets, we’ll show you how to tenderize the protein and set up the breading stations. 
  • Get a head start on this meal by prepping and slicing the cabbage up to 5 days in advance.

Diet Variation:

  • With such great gluten-free products on the market, it’s no problem to prepare this dish with GF flour (such as almond flour), breadcrumbs, and noodles.
  • It’s a snap to make this meal paleo compliant by using almond meal as the breading for the pork cutlets and by skipping the noodles.
  • A cozy meal is in store for vegetarians with our Mushroom and Lentil Stroganoff, which gets rave reviews from vegetarians and non-vegetarians alike.

THURSDAY

Waffle Iron Grilled Cheese with Spring Mix Salad

End the week with a super fun spin on the classic grilled cheese sandwich – made in a waffle iron! The bread develops pockets of extra toasty flavor and texture, which is the perfect complement to melty cheese. Serve with a refreshing green salad with tart apples and cool cucumbers to round out this meal.  

Meal Planning Smarts:

  • Leftover Monterey cheese and sourdough bread from earlier in the week are repurposed into a fun waffle iron grilled cheese, ensuring that nothing goes to waste AND it’s a super delicious meal!
  • We use apples in both the side salad and in Wednesday’s braised cabbage dish. Feel free to pick a tart variety, or try an apple variety that’s new to you.

Diet Variation:

  • Use your favorite gluten-free bread for an out-of-this-world GF grilled cheese sandwich.
  • For a fun paleo twist, try our Cajun Sweet Potato “Waffles” served with fried eggs and a side salad.
  • Our original version of this recipe is already vegetarian, but also very budget-friendly!
