Enjoy this week’s menu of fast, fresh summer meals! From Panko Crusted Salmon to two recipes that use rotisserie chicken, we’ve got a little something for everyone.

Maple-Dijon Panko Crusted Salmon with Corn & Peach Salad

This panko crusted salmon recipe has been a community favorite since 2015 because it is just so dang delicious. We love mixing things up by pairing it with a side dish to match the season! To make this a true meal to remember, our 40-minute summery version features a unique corn and peach salad with a drizzle of tangy shallot vinaigrette on top.

Meal Planning Smarts:

  • Salmon freezes and reheats really well, so you can easily save leftovers for a busy week in the future.
  • This meal uses a little chopped cilantro to add flavor to the panko crust, but we make sure to use up the rest of the fresh bundle in other recipes this week so none goes to waste.

Diet Variation:

  • Our gluten-free version of this meal uses gluten free panko breadcrumbs and tamari for the salmon crust.
  • Our Paleo version uses almond meal and coconut aminos for the crust and serves it with a cucumber and peach salad.
  • Vegetarians can enjoy our Chopped Salad with Panko Crusted Halloumi, which utilizes an oven or air fryer to crisp up the flavorful, firm cheese.


Rotisserie Chicken Banh Mi Wrap with Mango Pear Smoothie

To give you a great cooking shortcut this week, we have you use rotisserie chicken for these wraps that are inspired by Vietnamese Banh Mi sandwiches. The pickles and Sriracha mayo give this meal plenty of flavor and texture, while a mango and pear smoothie brings a refreshingly sweet finish.

Meal Planning Smarts:

  • To save you time in the kitchen this week, we use shredded rotisserie chicken for these Chicken Banh Mi Wraps and Thursday’s Cheddar Shells.
  • Use more of your fresh bundle of cilantro in this meal to bring authentic banh mi flavors to life.

Diet Variation:

  • Use gluten-free tortillas to make these wraps gluten-free.
  • Our Paleo version of this meal turns the wraps into lettuce wraps and adds cashews for extra heartiness.
  • Our vegetarian Spice-Rubbed Tofu Banh Mi Wrap keeps all the same flavors but swaps out the chicken for tofu.

Slow Cooker BBQ Ribs with Green Salad & Watermelon

These tender ribs don’t just get their mind-blowing flavor from a homemade dry rub, they are also brushed with your favorite BBQ sauce right before getting popped in the oven. Then when you pair the slow cooker BBQ ribs with light sides of watermelon slices and a butterhead lettuce salad, you’ll have a hearty, balanced meal that is perfect for late summer.

Meal Planning Smarts:

  • This dinner only takes 40 minutes of active time in the kitchen when you put your slow cooker to use, but oven instructions are also included.
  • This meal can be made even faster with the use of an Instant Pot and the recipe can be easily converted.
  • Our Slow Cooker BBQ Ribs can be pre-cooked up to 2 days ahead and just finished in the oven when you’re ready to serve.

Diet Variation:

  • Our original recipe is already gluten-free and only needs a slight tweak in the salad dressing to be completely Paleo as well.
  • Our 40-minute BBQ Lentil Sandwiches are our vegetarian version of BBQ Sloppy Joe’s and pair great with the original sides.


Cheddar Shells with Rotisserie Chicken & Broccoli

It’s always a great idea to close out the week with a super simple dish. That’s why we planned this classic dish for Thursday because many of our community members have loved returning to it again and again whenever they need a quick weeknight meal. In just 30 minutes, the whole family can sit down to a delicious dinner of cheesy pasta shells with rotisserie chicken and broccoli.

Meal Planning Smarts:

  • To save time and add flavor when making these Cheddar Shells, we have you use the second half of the rotisserie chicken you prepped for Tuesday’s Banh Mi Wraps.

Diet Variation:

  • To make this recipe gluten-free, just use GF pasta and flour.
  • For the vegetarians out there, we have a fun Latin-Spiced Cheddar Shells recipe with black beans and broccoli.
  • For our Paleo members, we have a Chicken and Broccoli Saute with bacon that still uses the same rotisserie chicken.
