MONDAY

Slow Cooker Adobo Chicken with Bok Choy & Rice

The wonder of our adobo chicken recipe is that it’s not only deliciously savory and slightly sweet, it also requires little effort for a big pay off. After 3 hours in the slow cooker, the tender chicken pairs beautifully with sauteed and seasoned bok choy and a side of white or brown rice. In just 35 minutes of active time in the kitchen, you’ll have yourself a super easy dinner that is bursting with flavor.

Oh, and did we mention that this is a low-calorie dinner? Well, it has less than 400 calories per serving while having a truly satisfying balance of greens, proteins, and carbs!

Meal Planning Smarts:

  • To minimize your time in the kitchen, we made sure that the adobo chicken can be made ahead and used in two different meals to make this week a breeze.
  • In addition to the slow cooker and oven instructions that we provide in our meal plan recipe, this adobo chicken can easily be adapted for Instant Pot cooking, which you can find tips for in the Cook Smarts Instant Pot Facebook Group.

Diet Variation:

  • Use tamari instead of soy sauce for a gluten-free meal.
  • If you’re eating paleo, we swap out the bok choy and rice for a simple cauliflower fried rice.
  • For the vegetarians among us, we have a delicious Tofu, Shiitake, and Bok Choy Stir-Fry served over rice.

TUESDAY

Kofta Burger with Chermoula Mayo & Carrot Salad

If you have never tried kofta before, you’re in for an exciting new way to enjoy meat when you try these grill-friendly fusion burgers! Kofta originated in the Middle East and is a mixture of ground meat that is seasoned with dried spices and rolled into meatballs or wrapped around skewers. We took this concept and put a burger twist on it for this delicious dinner that is full of flavor and texture. You’ll get crunch from fresh cucumbers, creaminess from an herby chermoula mayonnaise, and a little savory-sweetness from a shredded carrot side salad.

Meal Planning Smarts:

  • Doubling up on the North African herb sauce known as chermoula will allow you to add delicious flavor to Wednesday’s meal as well, and it won’t take any extra time!

Diet Variation:

  • To make this meal gluten-free, simple pick up GF buns at the store.
  • For a Paleo option, nix the buns altogether.
  • To make meatless burgers, we’ll teach you how to put together delicious lentil kofta patties!

“The recipes are excellent, and the veggie options have not yet let me down. I am eating better and spending less and absolutely wasting less since I began using Cook Smarts to help meal plan and — importantly — grocery shop.”

WEDNESDAY

Middle Eastern Breakfast Tacos with Chermoula Roasted Potatoes

Breakfast for dinner is always a fun treat, but just wait until we give it a Middle Eastern twist! This fast, customizable meal brings eggs and tortillas together with some classic ingredients used in the Middle East — from feta cheese, to Ras El Hanout seasoning, to tomatoes and cucumbers. And, let’s not forget our side of savory chermoula roasted potatoes, which we know you are going to want to make all the time!

Meal Planning Smarts:

  • If you double up on chermoula sauce earlier in the week, these Middle Eastern tacos will come together in just 30 minutes.
  • You can buy Ras El Hanout at your local market or online, or try making it yourself if you can’t find it with the help of our Guide to Spices.

Diet Variation:

  • These Middle Eastern tacos are already vegetarian and gluten-free, making them perfect to cook up for a group with various diets.
  • If you are on the Paleo diet or cooking for someone who is, we have a delicious Middle-Eastern Scramble recipe for you with a side of chermoula roasted cauliflower.

THURSDAY

Adobo Chicken Salad with Asian Vinaigrette

To close our convenient menu lineup this week, we have a fresh and colorful Asian Fusion salad that strikes the perfect balance of savory and sweet. In a tasty east-meets-west flavor profile, our salad recipe pairs tender adobo chicken, bright edamame, refreshing clementines, and an easy Asian-inspired vinaigrette. This quick dinner is so refreshing, you’ll keep coming back to it anytime you feel that craving for crisp greens.

Meal Planning Smarts:

  • This healthy meal comes together in just a few minutes because our meal plan has you use leftover adobo chicken from Monday’s meal.

Diet Variation:

  • To make our Asian-inspired vinaigrette gluten-free, substitute the soy sauce with tamari.
  • To make the Adobo Chicken Salad Paleo-friendly, we have you tweak the dressing, omit the edamame, and add in cubed avocado.
  • Our vegetarian recipe leans into the Asian side of the original salad with an Asian Quinoa Salad that replaces the chicken with quinoa and adds in avocado as well.

All meals come with gluten-free, paleo, and vegetarian options, as well as a grocery list and optional weekend prep steps. Join our weekly meal plan service to get the grocery list, dinner steps, and more cooking tips for these 4 simple dinners.
