This week’s convenient menu utilizes shortcuts so that you can cook once and eat twice! From Middle Eastern Tacos to Asian Fusion Adobo Chicken Salad, we’ve got deliciously exciting recipes that will save you tons of time.

Slow Cooker Adobo Chicken with Bok Choy & Rice

The wonder of our adobo chicken recipe is that it’s not only deliciously savory and slightly sweet, it also requires little effort for a big pay off. After 3 hours in the slow cooker, the tender chicken pairs beautifully with sauteed and seasoned bok choy and a side of white or brown rice. In just 35 minutes of active time in the kitchen, you’ll have yourself a super easy dinner that is bursting with flavor.

Oh, and did we mention that this is a low-calorie dinner? Well, it has less than 400 calories per serving while having a truly satisfying balance of greens, proteins, and carbs!

Meal Planning Smarts:

  • To minimize your time in the kitchen, we made sure that the adobo chicken can be made ahead and used in two different meals to make this week a breeze.
  • In addition to the slow cooker and oven instructions that we provide in our meal plan recipe, this adobo chicken can easily be adapted for Instant Pot cooking, which you can find tips for in the Cook Smarts Instant Pot Facebook Group.

Diet Variation:

  • Use tamari instead of soy sauce for a gluten-free meal.
  • If you’re eating paleo, we swap out the bok choy and rice for a simple cauliflower fried rice.
  • For the vegetarians among us, we have a delicious Tofu, Shiitake, and Bok Choy Stir-Fry served over rice.


Kofta Burger with Chermoula Mayo & Carrot Salad

If you have never tried kofta before, you’re in for an exciting new way to enjoy meat when you try these grill-friendly fusion burgers! Kofta originated in the Middle East and is a mixture of ground meat that is seasoned with dried spices and rolled into meatballs or wrapped around skewers. We took this concept and put a burger twist on it for this delicious dinner that is full of flavor and texture. You’ll get crunch from fresh cucumbers, creaminess from an herby chermoula mayonnaise, and a little savory-sweetness from a shredded carrot side salad.

Meal Planning Smarts:

  • Doubling up on the North African herb sauce known as chermoula will allow you to add delicious flavor to Wednesday’s meal as well, and it won’t take any extra time!

Diet Variation:

  • To make this meal gluten-free, simple pick up GF buns at the store.
  • For a Paleo option, nix the buns altogether.
  • To make meatless burgers, we’ll teach you how to put together delicious lentil kofta patties!
