Have you ever felt lied to by a recipe?

It tells you, “I’ll only take 30 minutes to prepare. I’m easy!” and 1 hour later, you still have a pile of un-prepped veggies but find yourself standing in a disaster zone of a kitchen nowhere near a finished dinner.

We’ve all found ourselves in this frustrating situation. We wonder why we even bothered and swear off cooking. I clearly don’t want you to do that, so I’ve built something that is going to help you become more efficient in the kitchen and live a healthier lifestyle too.

I believe that one of the biggest roadblocks to healthier living is that we just don’t eat enough veggies. Americans especially are veggie deprived. Only 23% of our meals include a vegetable (and that counts French fries!) and on average we get less than 50% of the USDA recommended veggie consumption amounts.

We all know that vegetables do a body good. They’re chock full of nutrients that ward of illness. They make your skin glow, keep our bodies trim, and help you do your #2 with ease.

We all want those health benefits and would cook a lot more veggies but are afraid of dealing with the situation I described earlier. Wrestling a butternut squash for 30 minutes is the last thing you want to do after a long day. So how do we ensure that we eat more of this food group? My answer: “Get a sharp knife and learn how to properly prep them!”

If you’ve never experienced a sharp knife, it’s kind of magical. I used to bring my own set of knives to cooking lessons, and my students were just shocked with how swiftly they could cut through a carrot or a potato. If you don’t believe me, swing by my kitchen. I’d be happy to let you test drive these sleek babies. There’s no need to run out and get a new knife though. Just take your current one to get sharpened – a quick search on Yelp will surely turn something up.

The second part of my answer will take some work and practice from you, but I’m sure we’ve all learned by now that nothing awesome ever happened with no effort.
