MONDAY

Curried Yellow Lentil Soup

Full of warm spices, hearty vegetables, protein-rich lentils, and creamy coconut milk, this soup is the perfect way to start off your week! You’ll love making your own homemade tadka — sauteed Indian spices — that include garam masala, mild curry, turmeric, cumin, red chili flakes, and ghee (or substitute butter) to add layers of flavor throughout the soup. Serve with a cool, crisp salad on the side for a beautifully balanced meal.

Meal Planning Smarts:

  • Use frozen cauliflower rice as a way to add veggies to the soup while saving on prep time.
  • Fresh ginger adds a little zip to this soup and flavors the broth for Thursday’s braised brisket.

Diet Variation:

TUESDAY

Chicken and Waffles with Green Beans

We took the beloved Southern-inspired flavors of chicken and waffles and gave them a Cook Smarts twist. First, the crispy chicken is baked, not fried. Second, the homemade waffle batter calls for whole wheat flour. The result? A super delicious, fun, and healthy weeknight meal the whole family will love. Serve with maple syrup and a side of roasted green beans.

  • Get a head start on the crispy baked chicken by marinating the chicken the day before.

Hoisin Noodles with Shrimp

Sweet, savory, and ready in just 30 minutes? Yes, please! Rice noodles, carrots, snap peas, and shrimp are stir-fried in an absolutely delicious homemade sauce of hoisin, peanut butter, and Sriracha (for a spicy kick!). Top these shrimp noodle bowls with chopped peanuts and a fresh squeeze of lime juice for a weeknight recipe you’ll definitely want to keep in your back pocket.

Meal Planning Smarts:

  • Look for pre-shredded carrots at the grocery store to save on prep time.

Diet Variation:

  • Use tamari in place of soy sauce for a gluten-free noodle bowl. (Also be sure to read the label of the hoisin sauce to ensure it’s GF).
