MONDAY

Chicken Caesar Sandwich with Fries

Caesar salad is so tasty that we knew it was time to try it in chicken sandwich form. Sure, they are a little messy, but that’s part of the fun! Serve this Caesar sandwich with your favorite oven fries on the side and enjoy a delicious meal the whole family will love.

Meal Planning Smarts:

  • This recipe includes instructions for using the stovetop or grill.
  • Save lots of time by cooking a double batch of chicken for this Chicken Caesar Sandwich recipe and Thursday’s Chicken Summer Rolls.
  • Making the Caesar dressing over the weekend (or up to 5 days ahead of time) will keep things simple and fast on Monday evening.
  • Add extra chicken to salads or wraps for lunch leftovers.

TUESDAY

Pork and Cabbage Stir Fry with Peanut Sauce

Our rich and creamy peanut stir fry sauce is to die for and perfectly finishes this quick, 30-minute weeknight meal. Though we often serve stir fries over rice, we wanted to change things up a bit by using vermicelli rice noodles instead. This simple yet flavorful dinner is sure to be a winner among adults and kids alike.

Meal Planning Smarts:

  • Since the recipe calls for ½ a can of coconut milk in this peanut stir fry sauce, we planned for you to use the rest up in Wednesday’s Pineapple Banana Smoothie.
  • Save time by preparing a double batch of rice vermicelli noodles to use in this Pork and Cabbage Stir Fry and in Thursday’s Chicken Summer Rolls. The cooked noodles can be stored in a container of water in the fridge and simply drained before using.
  • You can make this dinner come together even faster by prepping the peanut stir fry sauce, cabbage, carrots, and chopped peanuts up to 5 days ahead of time.

Diet Variation:

  • Gluten-Free: Simply use tamari in our peanut stir fry sauce.
  • Paleo: Make our Paleo Pork and Cabbage Stir Fry recipe with a cashew sauce and spicy garlic broccoli.
  • Vegetarian: Swap out the pork for tofu.

WEDNESDAY

Rainbow Vegetable Flatbread

We had a great time arranging the colorful toppings in a rainbow for these quick and easy veggie-packed flatbreads. It’s a super fun way to involve your kids in the kitchen and can also be a festive way to celebrate Pride! Layers of mozzarella and hummus make this healthy, vegetarian meal still pack a protein punch with 27g per serving.

Meal Planning Smarts:

  • To save time Wednesday night, you can make this vegetable flatbread ahead of time and just reheat it in the oven or a toaster oven before serving.

THURSDAY

Chicken Summer Rolls with Pineapple Banana Smoothie

With crisp veggies and a Vietnamese-style nước chấm (also spelled nuoc nam, nuoc cham, or nuoc mam) dipping sauce, these fresh rolls are a fabulous way to get ready for summer. Pair them with a pineapple banana smoothie, and you’re all set for the warmer weather!

If this is your first time making summer rolls, it takes a bit of time to get the hang of it, but gets much faster with practice. It’s also fun to roll them up and a great way to get older kids excited to be in the kitchen. And, if you made a double batch of chicken and noodles earlier in the week, you’ll still have dinner on the table in 45 minutes or less.

Meal Planning Smarts:

  • Save time by using the rest of the rice vermicelli noodles cooked for Tuesday’s Pork and Cabbage Stir Fry recipe and the chicken you made for Monday’s Chicken Caesar Sandwich recipe.
  • Use up the can of coconut milk you opened for Tuesday’s peanut stir fry sauce so none go to waste.
  • The nước chấm dipping sauce can be made up to 5 days ahead, so whisk that together when you have some downtime during the week!

Diet Variation:

  • Gluten-Free: Use tamari when marinating the chicken.
