We’re starting off the week with Slow Cooker Sopa Azteca. This dish is based on a classic tortilla soup that originated in Mexico City, so the broth is full of onion, garlic, tomato, and chili pepper. Our recipes adds carrots and bell peppers to bring in more nutrients, flavors, and substance. We have you slow-cook chicken thighs in the broth so it absorbs all of those great flavors. We also have Instant Pot instructions for this soup, if that’s more your thing! In the vegetarian version you’ll cook the Sopa Azteca on the stovetop with lentils, and it is ready in just 30 minutes!
And of course tortilla soup has to have crispy tortilla strips, some nice creamy avocado, a dollop of sour cream, and a sprinkle of fresh cilantro to finish it off. Sounds delicious, right? Well, it’s a good thing this recipe reheats well so you can make it ahead and even cook a big batch to freeze for a busy week.

On Tuesday, we’re having Prosciutto Wrapped Chicken Breast with delectable lemony garlic broccoli. This is such a fun meal and it looks so impressive, but it’s really just a few simple ingredients and ready in just 40 minutes. What you’ll do is stuff the chicken breasts with basil and mozzarella (or spinach for the paleo version). Then we show you exactly how to wrap them in prosciutto before cooking and how to make a really quick white wine sauce to go on top. Sounds so fancy, right? But it’s easy, we promise! If you’re making the vegetarian version, you’ll be having a yummy Chard and Cheese Frittata with a side of that same lemony garlic broccoli.

On Wednesday, we’re going to be enjoying our Asian Meatloaf with shiitake mushrooms and carrots folded in. This is a brand new meal, and we think you’re going to love it. Instead of big slices of meatloaf like you often see, you’ll make these cute little individual size meatloaves (or mashed kidney bean patties) that get baked in muffin tins, which makes them more fun and also makes them super easy to freeze for a lunch or dinner later on. Along with shiitake and carrots, the meatballs are mixed with some classic Asian flavors, have a sweet and savory glaze on top, and are sprinkled with sesame seeds before being served up with a side of spicy Szechuan green beans.

Then to finish out the week, we have a delicious Vegetable Stromboli recipe, which is like a rolled pizza that’s baked and then sliced. Ours is filled with green peppers, mushrooms, and mozzarella, along with just the thinnest little layer of tomato sauce. Pizza is pretty much everyone’s favorite comfort food, but it’s nice to change things up just a little in the presentation. And, just like pizza, our Vegetable Stromboli is easy to freeze and reheats beautifully, so this recipe is perfect to make ahead or make a double batch to save half for later.
If you’re on the Whole30 or paleo train, you’ll use those same flavors in a 35-minute Chicken, Bell Pepper, and Mushroom Sauté with Marinara. Both our Vegetable Stromboli and paleo sauté are served with a clean and classic mixed green salad tossed in a red or white wine vinaigrette.
