MONDAY

Blackened Chicken with Mango Salsa

Start the week with grilled marinated chicken that’s simple, scrumptious, and a sign that summer is on the way! Every bite has the perfect balance of sweet and spicy, thanks to Jerk (or Cajun) seasoning and a colorful homemade mango salsa with red bell peppers, jalapenos, shallots, cilantro, and lime juice. Serve with spiced zucchini spears for an irresistible veggie side dish.
