I'm going to try this recipe for dinner next week. Would it ruin the recipe if I substitute the cheese for a soy cheese or other lactose free option? I'm worried it won't melt (or taste) right. Any recommendations? Or, should I save this one for those who can stomach dairy products?
Go for the soy cheese! We've found some good options these days. Daiya works really well for us. Good job for planning dinner for the week, ;)
