  • I beg to differ, no sweetener is necessary for a good vinaigrette. my basic recipe is one part mustard, one part vinegar, 3 parts oil. (vinegar can be replaced by lemon juice) and its always a hit.

    • Thanks for your input, Clem! Sweetener is not necessary, but we do like to add a bit to balance the acidity. It's more of a personal preference, so if folks don't like to add sweetness to their dressings, that's perfectly fine. Sometimes we'll forgo the sweetener as well, depending on what we're making!

  • I'm with Clem. A sweetener can certainly improve a dressing, but it can also just be superfluous in many cases. It's all a matter of taste, of course. My tastes run to salty/savory, so oftentimes I find that added sweetener which is meant to "cut the acidity" just kind of ...well... *ruins* the acidity, for my palate.

    Anyway, this infographic is fantastic -- a great starting point with loads of ideas for variety even if it does need some tweaking for my individual likes and dislikes.

    • We agree, Teresa. It's all about personal preference - sometimes we like it more tart, sometimes sweeter.
