Candice: Getting Creative in the Kitchen

Candice: Hero in the Kitchen via @cooksmartsAs a dietitian and self-taught cook, Candice is no stranger to food and cooking. But as many of our Kitchen Heroes realized, that’s not enough to get dinner on the table. Having a meal plan service helps Candice think of what to make for dinner every night. She is also able to experiment and create delicious meals, such as her famous Lemon Blueberry Ricotta Pancakes. Read Candice’s Heroes in the Kitchen story below.

I cook for: my husband and friends
Outside of the kitchen I: am a newborn and baby photographer, as well as a registered dietitian. I love eating out, wine tasting, and for exercise, paddleboarding and barre class. But most of all, I love naps!
Being able to cook allows me to: be creative. My dietitian job is pretty clinical, so it’s nice to invent.
Favorite Cook Smarts meal: It’s hard to choose! Maple-dijon panko crusted salmon (paleo version) is one that I keep coming back to and also telling others about.

How did you learn to cook?

I kind of just taught myself. My grandmother was a great cook and I’ve loved food since I was little. I guess during college I got more interested, and then increasingly so as the years went by. I watched A LOT of Food Network!

What’s been your biggest cooking challenge in the past?

It’s hard for me to make things that require patience and preciseness, like French toast, rice, and bread.

How has your cooking routine changed recently?

I have a plan now. Before, I would just think, “What do I have and what sounds good?” Now I have an outline for the week.

What new skill or dish have you cooked that you’re most proud of?

I’m famous for my lemon blueberry ricotta pancakes. They are kind of the bomb.

What advice would you give to other home cooks who want to be cooking more family dinners?

Join Cook Smarts! Seriously, it’s so easy, the meals are always delish, and it’s not expensive. Also, just start cooking. Everyone has to start somewhere.
