Your mom may have taught you how to follow a recipe or bake the best chocolate chip cookies, but the wisdom of these 5 cooking secrets are rarely passed on from generation to generation. Perhaps because these secrets seem more common sense than anything truly secretive, they’re often overlooked as real wisdom to be shared. However, with fewer and fewer people actually learning the basics of cooking, it’s hard to guess what folks may already know in the kitchen anymore. Recipes often over-assume and aren’t always explicit about every step one should take to guarantee awesomeness. Plus, they rarely tell you how to troubleshoot if issues may arise. I have been following you for a about a week, and I must say this is one of the best food blogs I have seen, hands down. And your weekly cooksmarts menu? WOW.     Hi Jess, I’ve been cooking for a LONG time and yet I feel like I just learned something new. Yay you! I do have a question (or 2) though: what is the difference between Kosher and Sea Salt and why not just use regular table salt? Also, so many people need to cut back on their salt intake…what do you recommnend for them? Thanks!

      @Sharon So kosher and sea salt taste virtually the same, but kosher is a lot less expensive so it’s my go-to seasoning salt. I use sea salt more for finishing dishes. I buy a huge box (for <$3) and empty some out out in a bowl that sits right on my stovetop. It’s the preferred seasoning salt for chefs not only because of its price tag but because it’s got a great texture. Easy to pinch off and just measure with your fingers. Hope that helps!
